Southwest Salad

This southwestern salad is a perfect meal for a bright summer day. With spinach, avocado and radish, this salad is a light meal that will not weigh you down.


This meal is detox friendly, gluten free, vegetarian and vegan friendly. This salad features healthy greens and plant-based proteins. If you don't share my love of crispy tofu, add in extra black beans but be mindful of the calories if you are tracking your numbers. Avocado adds in healthy fats to help your lubricate your joints and can help reduce your risk of heart disease. To create this salad, combine the ingredients and top with the dressing!




For this salad combine:




Black beans


Red Onion

Tomato, chopped





For the dressing combine and blend:


Olive Oil


Lime juice



*Add water if the blender is having trouble combining the mixture.
