This sushi bowl is a perfect meal for a bright summer day. With cauliflower rice and avocado, this sushi bowl is a low carb meal that will not weigh you down.
This meal is detox friendly, gluten free, vegetarian and vegan friendly. This sushi bowl features healthy greens and plant-based proteins. If you don't share my love of crispy tofu, you can add in edamame or roasted chickpeas. Avocado adds in healthy fats to help your lubricate your joints and can help reduce your risk of heart disease. To create this sushi bowl, combine the ingredients and top with the dressing!

You can make this bowl as simple or as complicated as you want. My favorite sushi roll is called the green goddess roll and only has a couple ingredients. In the green goddess roll you will find sweet potato, green onion and avocado. It's so simple but so delicious, especially with a little bit of spicy mayo.
For the base of your sushi bowl you can choose from white rice, brown rice, quinoa and cauliflower rice. Cauliflower rice is the low carb option but quinoa and brown rice are also healthy options. Once you choose your base add on the toppings and drizzle on the sauce.
